Am I safe to assume that as long as you have a wifi model you can downgrade back and forth?

As long as you have shsh or apple is signing both ios versions.

As of now, you can DFU restore back to the latest 4.3 version, but I'd make sure you have your SHSH blobs not just on Cydia, but saved in a number of places. This way, if iOS 5 is un-jailbreakable, you can downgrade, and perhaps use a custom ipsw with iOS 5 on it.

This weekend, I might try it on my iPad 1 as I don't use it that often, but I won't risk it on my iPad 2. I have my SHSHs saved on Cydia, but I will save it locally also.
