I'm looking for a good quality and reliable USB 3.0 2.5" external enclosure to use with the 1Tb HDD which came with the Mac Mini.

Suggestions would be highly appreciated, I didn't find anything interesting so far...

The SK-2500 U3+ comes with a separate power supply. Larger HDDs need this power supply, because they have a stronger motor.

I stuck a SSD in my MacBook and put my MacBook HDD into one of these:

Great enclosure - and gives me full USB3 speeds every time.
No issues at all.

I tested the HDD speed while it was in my MacBook, and then tested the speed via the external enclosure and got the exact same speed with both. In other words, connect the drive through this USB 3 enclosure and you'll get the same speed as if it was still in the system itself.

Interesting since it only had a SATA-I interface inside...

Thats what it says on Amazon, but I still get the full drive speed - the same as it was when in my system.
I have an interface speedtest on my YouTube channel somewhere I think.

Remember you can always return it for refund if you do not like it - but for me its given me full drive speed and Im very happy with it.
The only thing I dont like is the brightness of that LED - its too bright! lol
