When I'm in Safari in iOS and select a nearby spot via a google search, I can click on the "Directions" button to get directions.

This *always* launches Google Maps if I tap "Directions" instead of Apple's Maps.app. (Same results if I do this via Chrome, but I was expecting this.)

Where is the setting to change this to launch Apple maps.app instead?

...or is this Google's way of hijacking the search results to launch Google Maps no matter what since you're searching via google?

Quite possibly because it's Google and they can likely control what app they can send the directions to.
 
It's a Google Maps location you're viewing, and the button specifically targets the Google Maps app. In fact, if you were to remove Google Maps, it would just open the web version instead of Apple Maps. It's a Google thing, and not something you can control.

This has been the case for some time and it is not new to iOS 8.
 
You're using Google's search engine. It's only natural for them to give you a map using their own maps service than that of Apples'.
