Awesome present! But now I'm wondering if any hidden spy apps were installed before? I used my old SIM card and iCloud back up to the new phone. Anything I can do to check?

No spy apps. Congrats on the XR, you just bought a secure operating system that doesn’t allow spyware apps in the App Store and doesn’t make their money by collecting / selling your info.
 
It’s possible someone put spyware to spy on you take your pics and send them to the overlord. It’s possible.
 
I'm reading with jailbreak it's possible? So the person it's from could've jail broken it first?
You can't jailbreak the XR.. Your phone came with iOS12 installed and there is no jailbreak for that version of iOS. You also can't revert to any older version of iOS than what your phone had installed from the factory.. You should read up on what is and what isn't possible on iOS

If you are really serious about this issue, you can restore the device using iTunes. It will wipe and reinstall the firmware and everything will be reset back to default. Then, set up the device however you want.

When you got the device, if you see the welcome screen then the device was erased or restored already. Restoring the device will remove any jailbreak. iOS 12 is unjailbreakable.
 
Like others have said, restoring the phone via iTunes will bring it to factory default ... if you want to feel comfortable in your mind.

Yes when I first turned the device on I got the welcome and had to scan the watercolor mark.
 
It was a Christmas gift and yet you think the gift giver might have put some sort of "spy apps" on it before giving it to you? 2 questions come to mind. What kind of friends or relatives do you have? What brings about this kind of paranoia in ones life?

Have you been cheating? Do you have another man/women on the side? worried you might get your phone calls listened to? location tracked?

only guilty ones think like that.

There's no way anyone has put spyware on your phone, just pop our sim in and relax and facetime, send pics ;) and text. Don't worry no one is going to know!! :p:p
 
I think the OP is worried about his significant other finding out about the affairs...
