Got Final Cut and have one small issue

I needed to be able to blur items out of video and got 2 new HD camcorders so I got Final Cut Express. I found nice info and vids but exporting or finalizing the video is giving me a headache.

Q1: Why does finalizing the video throw off the white balance (ie make it lighter in color)?

Q2: Why does it insist on making 4:3 video into 16:9 even though I choose to export it at 4:3 or the 640 x 480 that the video was recorded at?

I'll get a Final Cut book later this week but want to finish this edit today or tomorrow.
