If you have the GPS only watch and go for a run, or bike ride, or whatever, do you need too physically carry the iPhone to track time and distance?

one other thing to check before you buy
if you're planning on listing to music/podcasts through bluetooth headphones while you run, and don't want to carry your phone, make sure you'll be able to do what you want

I believe the only streaming service that will let you sync music to the watch is Apple Music.
If you have music files on a hard drive, you can sync those, if they've been synced to your phone first.

apple's podcast app will sync from the phone,
I believe overcast will also.

Following on to @waw74's post, what I know is:

Pandora has an offline listening mode for the paid users; seemed very limited in how much content was on the watch in the little bit I've played with it. That was a while ago though so it may have changed.

Music - I've never subscribed to Apple Music - just have my itunes library and use itunes Match or whatever the name is. Very simple to select playlists or artist/albums from the Watch app on my phone and it'll put that content on the watch, even if it's not on the phone. I suppose if I didn't have itunes Match I'd need to directly sync from computer to phone first.

Podcasts - I've used the included Podcast app quite a bit and it's pretty decent, though it has its challenges. Recently I've started using Outcast - and the watch app has direct-download to the watch over cellular or wifi.

FYI - I've long been a fan of Podrunner for running music - podcast workout music mixes to a set beats-per-minute. See https://podrunner.com/
