Does the GPU affect Photoshop performance or the performance of other apps like Photoshop? If so, is there a big difference between the 13" high-end, the 15" low-end and the 15" high-end?

Also, do you think I'll be able to play games like BF:BC2 and WoW on the 15" low-end? (medium settings is fine)

Gpu does matter, yes, If that app supports gpu acceleration. We don't know about gaming yet... that card is untested.
 
If you want to play games go for the high-end 15". The 330M can run WoW sufficiently on medium-high (in OS X), but from what I've read, the 6490M is actually worse than the 330M. For me going with the 6750M was a no brainer.
 
The gpu accelerates individual filters and/or aspects of photoshop, and not the whole thing, last I read. On other things, it can make for higher quality workflow, such as smoothing out an image no matter the zoom level, but that's something even low end gpus can do with competence.
