Surprised nobody has answered you. Sounds like a great question and I would like to know the answer too  Surely someone will be along soon to give you an answer. Sorry I can't help!

I am assuming it is HTML formatted email, but I wouldn't really know.

Its called "HTML mails"

if you are using thunderbird, its composer has pretty comprehensive editor. supporting common webpage elements like tables, pictures, etc.

its a little bit more complicated to compose HTML mail in mail.app, do some google search if you are using it.

ok for those who want the solution without searching though millions of cryptic google results this is the best one i found.

Compose you HTML email in the application of your preference.
Include all styling in the HTML page.
Upload it to your server (if you don't use images you don't need this step).
Open the page in Safari.
Press Apple(Cmd)-I.
The web page will open in Mail.app as a new HTML message.
