These two Screen Protectors do have exactly the same cut, and therefore they will both fit your iPad 3's screen with a similar finish (crystal clear/glossy finish).
In terms of the differences, the Anti-Fingerprint Screen Protector mainly "hides" your fingerprints, and does this job especially well at most of the reading angles (fingerprints could be more visible at extreme/uncommon viewing angles).
The con about this type of Screen Protector is that the fingerprints, although not easily seen when the screen's off, once the screen is on, you will be able to see the graining effect caused by the fingerprints if they are smudgy/thick enough.
On the other hand, the Oleophbic Screen Protector does not hide the prints, instead, it "refuses" smudges and prints to land and therefore stick on the screen. Since it does not "hide" the prints, you might be able to see it more obviously when the screen is off, but it provides a completely graining-free viewing experience when the screen is on, and it is also extremely easy to clean.
I've attached the URLs of our demo videos for both types of Screen Protector for your reference, please feel free to take a look at both of them:
