Do I have to be connected to the internet to JB? I already have GP downloaded but I have to disconnect from internet (tethering) to hookup my co-workers phone to JB. Can I do this or do I have to be connected during JB process?

No, you do not need an internet connection to use GP. But you will need a WiFi connection afterwards to install Cydia from the GP installer on the iPhone.

I guess you don't then. My iPhone's wifi is always on (I probably didn't notice).
