iPod touch Grouping Apps & a quick misc question

Is there a way to group Apps so I don't see 3 pages of apps?

Also, on my homescreen once I briefly saw a small control for music pop up with a forward, back, and pause button. Why did this come up and how do I get it up?

No you can't group apps in the way you want, you'll have to put up with having 3 pages for now.

To bring up the music controls, press the home button twice very quickly. It allows you to control volume and the track you're listening to whenever you're outside of the 'now playing' screen.
