I don't get it.
I got a new replacement from Apple and I though that would fix the problem.

Could having too many apps or photos or texts be the problem?
Or are all iphone 4s laggy now because of updates?

It used to be so fast when I bought it in june

now it's just bleh

and texting is for some reason much harder... it never gets the keys I want or it will lag and not register inputs for a couple seconds

Try resetting the dictionary, my 3GS did the same thing with laggy typing. Fixed it right up.

Do you have a lot of apps running? Sometimes when my phone gets laggy I'll double tap the home button to list out all my running programs, and go through and kill the ones I'm not using. Speeds my phone up a ton.
 
Turn off spotlight

Dig up spotlight in your preferences and disable it. If you have a truckload of data on your device (images, contacts etc) Spotlight will slow down the system quite a bit.
 
When you got your replacement, did you allow iTunes to restore it from the backup of your old phone?

Maybe it's time to reinstall iOS and then set it up as a new device. Assuming all your content is in iTunes and/or sync'd through something like MobileMe it shouldn't be too much of a killer.

It has been a long time since I've seen laggy keyboard input on an iPhone!
 
I find doing a hard reset will generally fix any lag I have on my iPhone - usually worse if I've just installed a few new apps

I think this is it too even though apple says you don't have to manage it. Why else would they enable you to kill these apps in the MT bar. I swear Smurf's Village is slowing mine down. Every time it's lagging I kill smurfs and it is instantly better.

Hard resets don't do anything. Closer all apps seems to help a little. Keeping just a small amount of photos (instead of hundreds) seems to help a little too.

Wow you summed up my situation perfect. Its annoying but I still live with it. Makes me that much more excited for the next iPhone whenever it releases.

Well if I restore as new I'll lose all my texts and contacts :(

Back it up then Restore as new. If the problem persists, you know it's the OS, and not anything in your data. If the problem is resolved, you have a decision to make before restoring your backup data.
Either way you'll have answered the main question as to where the issue is.
 
You won't lose your contacts, if you learn how to sync with Google or Outlook.

I've tried but it doesn't seem to work

how to back up or extract text messages though? at least on to my pc?
