Hi, I installed Big Sur on my Mac Pro 5,1 via OpenCore. The original AMD HD5770 with boot screen works fine. Except for the utterly dreadful performance... So I also have a Nvidia GT630 with Kepler chipset which is Metal compatible and worked totally fine on Catalina. It has no bootscreen though. But on Big Sur the Mac Pro wouldn't even boot or show any signs of life except for the startup chime. NVRAM reset doesn't help btw. I suspect the Nvidia GPU to not be supported by Big Sur. What do you think?
 
I have GT-640 and it works in Big Sur. As far as boot screen you need to find out if it has GOP. If it is an EVGA you can request the latest firmware with GOP from EVGA. Then there are 2 quirks in OpenCore you have to enable to get the boot screen.
