I know the Guest account automatically deletes all files in that account when you log out. Is there any way to make OSX do a Secure Erase of those files instead of a simple delete?

If you are accessing sensitive data via some other owner's guest account, then the ability to secure erase are the least of your concerns.

If I were doing what you suggest, I wouldn't have started this thread. I'd have used srm instead.
