I went through the process of transitioning from my iPhone 6S Plus to my iPhone 7 Plus today.

Here are the things I did, and most everything I need in the Restore from Backup process comes through but some stuff doesn't. I thought it would be worth having a list. Anything missing?

First the process:
  1. Update all apps in iTunes. This includes going into Purchased in the store and finding any apps you bought on your iPhone that have not downloaded to iTunes. Apparently when you sync it never really copies the purchases back when it says transferring purchases to iTunes.
  2. If you have an Apple Watch, unpair your Apple Watch on your phone. This will separate the two and make a current backup in your iPhone which will end up in your backup in #3.
  3. Plug in your old iPhone any sync including a backup. Make sure the backup is encrypted so you get Health and Activity data as well as passwords. And if you use iCloud, switch to computer backup. You should run the backup manually from the Summary window after a sync if you change any of those settings.
  4. Activate your new iPhone and connect to iTunes and Restore from Backup. During this process of activating, you will put in your iTunes password, add at least one Touch ID finger back, and add the WiFi password for your home network unless you chose to skip any of those. After you have done those and connected, iTunes will restore. But you will still need to hit sync once after this to get it to copy all apps, music, and other content. The restore deals a lot more with Settings, iCloud, other mail accounts, etc.

After you have completed this, what is left that doesn't "restore" from the iPhone backup.

  1. You will need to go into the Apple Watch app, and re-pair your Watch, and you can then restore the Watch from a backup contained in your iPhone.
  2. You will need to put passwords in when you are in range for any WiFi networks that are not your home network. Those are not retained.
  3. Likewise, any and all Bluetooth devices, such as headphones, speakers, and cars, will need to be re-paired to your iPhone.
  4. You will need to reset up Apple Pay credit cards. Loyalty cards usually transfer, but Apple Pay will need credit cards re-entered and authorized. You will also need to do that on the Watch once you enter them into your phone.
  5. Some apps, but not all apps that require a login when launching the app will require the password to be entered the first time, even if you enable Touch ID to log you in. You may in fact need to reselect that option. Amex seems to retain it but other CCs and banking apps don't.
  6. There may be a few other minor setting in iOS that you find over time didn't transfer as they are not included. Not sure what they are.
