My iPhone as heating and having issues so they replaced it today at the Apple Store. Only they told me it has to be set up as a new phone. No restoring.

I had everything backed up to iCloud. Not my Music, because I don't buy from iTunes. Can I add my music back without restoring and it will have all my metadata, ratings etc? Is there some xml file on my computer or something that has this?

I'd hate to just drag a folder into a newly set up Library and lose all my music data and playlists.

I also noticed my contacts are missing. I found them in my Google account but I'm not sure how to get these back on my phone. Or if I could get them back on my phone, then turn off Google sync, and sync to iCloud instead. Does this make sense?
Most of my contacts were not on icloud.com
Can I export google contacts as vcf or csv, import to Mac Address Book, then add to iPhone, then sync to iCloud?. I think I would prefer this over Google sync just because I have so many apple products. Basically, my contacts are split between Google and iCloud, Google has 80% of them. How can I consolidate them to iCloud?

My Photostream also had 700+ photos in it at the store, now after being on my new phone and connecting to wifi it only has 87. Where did my photos go??? Also, do videos get uploaded to iCloud because I don't see any videos.

I just need help after setting up a replacement iPhone 5 as new, and salvaging my important stuff (contacts/photos/music). Apps I can get later.

EDIT: Ok, so I've gotten home and synced it to my computer. It seems the Music will be ok. Still have to figure out the contacts and photos issue.
