Is there no way to output a file to stereo which has a source that is only mono? Can Handbrake not do this? I'm only given the option for Mono and I assume adding two mono tracks will not create a stereo track. Is there something else I could use which would easily do this? I'm just converting an .avi to an .mp4.

Can you take scrambled egg and make a unscrambled egg out of it? You can't reverse a mono track back to stereo.

I could turn it into some kind of congealed lump if I smushed it together.

Is there some other piece of software which could take the mono track and duplicate it and then mix it down to turn it into stereo and convert my .avi to an mp4?

Just a guess....How about Audacity? It's free and I've been using it recently to rip what was left of my tape collection into iTunes...:

I have it installed but haven't really played with it beyond just making sure it was picking up my mic. Do you think it would let me add a mark beep so I could make sure the audio was actually in sync when I rejoin them? How did it go converting the cassettes? Did you tweak settings or just import them as is?
