I'm thinking of ripping some anime, my eyes are not the greatest and I'll probably just watch on my 15 in laptop, but I might also watch on my 50 inch tv. My question is what are the best settings? I want the smallest size possible but still watchable on a big screen...

If you are not going to put it on an iPod, then burn it at max res. Each 30 minute episode might be about 300MB maybe tad more. Remember that when you connect a computer to some TV's, the aspect ratio is completely messed up as well. I suggest you burn one episode or short 3 minute clip in a number of different settings and see which one suits you best.
