handoff doesn't show on iPhone?

Am I missing something with handoff. If I get an email and I want to reply back, using my phone, I should see the icon on the bottom left correct?
Can someone explain how it works? What apps support it?

Also if I just want to write a quick reply in an email, like "thanks" using siri to dictate to text i can't?

Check that you actually have handoff enabled on the phone. That was my problem.

And, no you can't respond to email in any way on the watch.

its turned on...what apps actually support handoff..

Lots do. Email, messages, phone, photos. One thing I thought was cool was that if you display a photo on your watch, you can use handoff to display it on the phone.
