Hi, simple question — if I connect an unformatted external SCSI hard disc, larger than 2 GB, to a System 6 Mac, what will it make of it? Will I be able to format it to 2 GB and use that space? Or will it just refuse to talk to it?

try some disk formatting software....like FWB's hard disk toolkit

Yes, you can use larger than 2gb disks, but you must have a partition for each 2gb. My Mac IIci has a 4gb drive with two 2gb partitions and it works fine!
