I just ordered an Apple TV 2 to compliment my iPad. I plan on ripping all my DVDs and BRs to a hard drive for easy access to all my movies and television shows. Is a 5400 RPM drive fast enough for SD and HD rips or should I go with a 7200 RPM drive? Any drive recommendations?

One other question: there seems to be conflicting reports regarding HD playback in my research. Some people claim 1080p plays fine, while others say there is stuttering and recommend 720p. Can I rip at 1080p or, for better compatibility, should I stick with 720p? I want to be able to watch my videos on the Apple TV and my iPad 2.
 
I can't answer the 720 vs 1080p confusion, but a 5400RPM HDD will be fast enough to play twenty-plus (20+) 1080p HD movies at once (simultaneously).
