I found this hard drive on Owc. I was wondering if the transfer rate mattered.
I saw that a 500 gb hitachi hard drive has a 3.0 Gb/s, and the 750 Gb hitachi hard drive has a 300 Mb/s.
 
Simple answer:

all drives have same speed, that 3GBs is just false advertizing

I think you got your numbers confused, as 300 Mb/s is 37.5 MB/s.
While HDDs come with a Serial-ATA 3.0 Gbps and Serial-ATA 6.0 Gbps interface, they can't even saturate the Serial-ATA 1.5 Gbps interface (approx. 150 MB/s), as they top out at 120 MB/s, many even at 100 MB/s.

So in the end, it doesn't matter.
