I'm taking about the green "+" button that intelligently resizes your window to fit the content rather that brainlessly creating a ton of useless white space &/or making lines of text unreadably long. Maximize as the default is a pain for me. It should be simple to change.

I don't think this is currently possible. I believe your only option is to press 'alt/option' key + green button to zoom.

I understand your frustration (although it doesn't bother me too much) and think that they should have an option to allow the users to change the default in System Preferences.

When zoom is set to default, alt/option key + green button would then activate fullscreen mode, instead of the other way round.

You could file a request feedback and maybe they might consider this option in the future.
