Has anyone tried like a 6 HomePod mini setup kind of like this? Each HomePod mini is paired as stereo speakers so all of the Circles are the HomePod Minis. I have done it with 4 and its sounds really good.

pretty cool, though it is not truly surround sound, just stereo.
So did you use 2 Apple TVs then, to hook-up your 4 minis?
Or did you use 1 Apple TV, with default output 1 stereo pair and then additinal Airplay to the other stero pair?

I just used one Apple TV 4K, then yeah I used airplay to connect the other set of HomePods. To me if have the then in the correct spaces they I’d take the two away from the middle in my drawing and put them behind you and put two by the tv to me sounds like surrounded sound

I've done this with two OG HomePods in front and two minis in the rear. It's not surround sound but it is very immersive nonetheless and sounds great. I don't have another pair to try the layout you are proposing but I suspect two more wouldn't add much to the effect. But give it a try anyway and let us know how it sounds.
At some point I think Apple is likely to announce a full surround capability probably using a new HomePod in front and minis in the rear. With any luck the OG HomePods will be supported as well. Note, this is just a wild ass guess. I have no inside knowledge. Just hoping.

Can you play music on all these 4 speakers from your iOS device or does it work with ATV only?
Yes, you can play music on all 4 speakers from your IOS device. This works with or without an ATV but Home Theatre mode for the OG pair requires the ATV.
By the way, I have my two minis in a different room but I often use my SONOS Roam speaker in the rear when watching TV with my two OG Pods in Home Theatre mode. Again, not surround but just adds some ambiance.
