Has something bad ever happened because of not installing a MacOS Security update?
I know that they fix some security issues, so that we won't get hacked and apple sometimes says on the security update page that certain issues have been "actively exploited", but has anyone ever really get hacked?
 
To me personally, no. But I usually install the security updates when I become aware of them, so we're talking a matter of a few months that I've been unaware that one was available. I suppose the longer you wait, the more vulnerable your Mac might become.

Most of the time it is better to wait a few weeks before installing SU, as commonly these days it breaks something.
Let the early installers check for problems first.
