My vo2 max appears to have jumped about 7 points since upgrading to series 6. For what it’s worth, I run cooper tests fairly regularly and calculating my vo2 max using that method puts me in line with my latest watch reading

Yup - mine has also gone up about 9-10 points suddenly. I believe (unsure though) that the new readings are more accurate.

Doesn’t the app only use walking or running workouts for calculating VO2 Max?
It seems to me that using all workouts to calculate this would be more accurate reading.

My Garmin watch says my VO2 is 44. My AW6 says 38 (it was 37 on my AW5). I do a lot of treadmill runs.

Not sure which is more 'accurate.'
