I have two Series 5 Aluminum Watches. One GPS and one Cellular+GPS.
Got what I thought was a decent trade in offer from Verizon (actually looks like going with Apple would be better) and it got me thinking. I generally keep my two watches a series apart and replace them after two years. But because of an issue with my cellular Series 4 Apple replaced it with a Series 5. Now deciding whether its worth replacing one with a Series 6 (either new or refurbished when Apple lists some) or wait for the Series 7.
Have read some of the "rumors" on what would be added to the 7 (let's ignore any major change in the shape) and both the Blood Glucose (I am borderline diabetic) and the Blood Pressure (getting older LOL) would interest me. Anyone heard of any reliable rumors on either actually being implemented in the AW7? Or any opinions on the Series 5 vs 6 and whether it is worth the upgrade?

In my opinion, if you already own an S5… upgrading is not really giving you much advantage apart from the SpO2 monitoring (which is nice but not too reliable in my case).
I‘d sell one of the S5s (not much sense in owning two of them) off as long as you still get a decent price and wait for the S7.

OP could also trade in via Apple for an Apple gift card, and hold onto this gift card until AW7 comes out.

 
The short answer : wait for AW7 !

The long answer : I have an AW5 and AW6... The only thing that made a real difference in day to day use and I can actually call it in improvement was that the battery charges faster on the AW6.

The SPo2 sensor is a nice addition but unless you have a medical condition and you have to used it often it's something that you use it a few times and you forget about it. Even with these times, for measuring the SPo2 I rather use a dedicated device that snaps onto your finger and monitors your SPo2 faster and continuously along with the heartrate.

The screen is plenty bright on the AW5 so the added brightness on the AW6 although is a welcome improvement I did not find it such a big deal.. I don't use always on display so there might be a difference... can't tell.

AW6 S6 is 20% faster than the AW5 S5 but honestly in day to day use I don't feel it, I found AW5 to be plenty fast... maybe you can tell if you use them side by side and compare but I am switching from AW5 to AW6 a few times a week and I did not felt once that AW5 was slower than AW6.

AW6 has 5Ghz Wi-fi... nice addition but kind of useless if you ask me. 5Ghz wifi is good for speed but worse when it comes to range. The watch does not actually need more net speed, it can't really take advantage of that... I can maybe think of a scenario like downloading a playlist on the watch (for offline playing) when you plan a run only with your watch... but other then that...

U1 chip... this one might be interesting but right now is just there waiting for some clever software implementations from the programmers

Always on altimeter - unless you actually need this one.... it's a software thing mainly because the AW5 has an altimeter as well

GPS performance - if you need the best, then I got to say that AW6 GPS implementation is better than AW5. It's not something huge but they managed to do things better... not cutting corners on the maps, not so much smoothing...
