I'm auctioning off an iPhone on eBay and have already had to cancel one bid from a user who was obviously a scammer. I'm a little concerned that when the auction ends the winning bidder will also end up being a scammer of some stripe.

My question is, have you ever been in a similar position and decided to end an auction prematurely and sell to the highest bidder at that time (i.e. a legit-looking bidder with high feedback ratings)? Other than sacrificing potentially higher sales prices, are there drawbacks to consider?

I do not believe there is a way to end an auction and then sell it to the highest bidder. You can end it and make a buy it now and message the high bidder. Or you can wait for it to end and if it is indeed a scammer that wins, you can second chance offer it to a legit bidder. I think those are the only 2 ways. Oh and you cant end an auction if it has less than 12 hours.
