I am running the iOS beta 8.1 (12B407) on my 5s and it's about to expire, so I figured let me go ahead and update it to the release version. However when I tell it check for updates in Settings on the phone, or when connected to iTunes it insisted I'm up to date already. I also tried doing a local backup of the iPhone and then restoring it in DFU mode and when it was done, the phone was back running 12B407 like nothing had changed.

What am I missing?

Why don't you just download the release IPSW and just restore it.
