HD Movie Conversion

I know this has probably been explained in many different ways already but i would like a nice explanation.

So i want to play HD movies from my hard drive and through my Xbox but .mkv files are a no go. I would like a free application to convert to .m4v please, thanks in advance

Thanks man, the first link there is actually ideal as I have handbrake installed.

I was saying nice explanation as in someone letting me know a start to finish route they know works without having to trawl through a large thread and piecing together information. Cheers for the effort in that post
