I'm looking for a solution that will allow me to input HD signals, namely component, into my Mac Pro. I'd like to be able to plug in an Xbox 360, or Wii and play with no latency issues. Other than buying a display with inputs, I'm not sure of any other way to do this. I'd like to do it through the computer if at all possible. I know there are plenty of tv tuners for macs out there, but I am wondering if there is a better solution for what I'm looking to do. Thanks!

Does XBox 360 have an HDMI Output on it? If so, Blackmagic-Design makes a Intensity HDMI i/o PCIe card to do what you want. For $995 they sell DeckLink HD Extreme that can accept the analog component HD in.
 
Yeah, in the little searching I did, I did stumble upon BlackBox, but that is a little expensive. I guess what I'd really like would be some sort of firewire 800 box with a bunch of inputs on the back. But sadly I don't think anything like that exists..
