HDD failure--need to get back music/apps/photos/etc

I was swapping out HDD from my TimeMachine backup when my computer's HDD got the click of death.

Any suggestions on the best way to get my music/apps/photos and everything else from my iPhone/iPad to the Mac?

Are photos on the iPad full size?

Can you use the time machine backup?

If not, the photos on your phone would sync back to the newly setup hard drive/itunes as would your apps. To get the music off your phone you would need some 3rd party software that i can't remember the name of off hand.
