I am considering getting a cellular s5 apple watch to replace my s0. I am curious about how it works with headphones. I have a cheap set paired with my phone, if I go for a run it means I can leave my phone at home and play music ect from my watch but I don't want to have to pair/forget/pair/forget everytime i go out and come back. Is it smart enough to work with both at the same time?
 
That's up to your headphones not the watch.

Check if your headphones can be paired with more than one device and merely connect to whichever one is available.

they seem to be ok with my s0. I have to go into the bluetooth settings and hit the headphones on the list for them to go over to the other one, but I guess it does need to know which it is working with

interestingly it'll swap between my phone and watch just fine, but not my iPad and either watch or phone

many of the headphones I've had over time seem to remember pairing with two devices and will switch between those just fine. which stinks if you're trying to share them between three or more sources.

in my case I use my airpods for most stuff other than running -- which I have a dedicated set of inexpensive headphones for running since I tend to damage even sweatproof headphones. Those I pair just with my watch.
