First, the in-ears: I bought them on eBay for a third of the price. As for audio quality, they are... good. Not great. Good. The remote function for my Touch was the primary reason I bought them. Personally, I prefer the Bose In-Ears, but that's just me.
 
Yes they are good. They are necessary for some features of the iPod. These come free with a purchase of a 3rd gen iPod touch I would recommend either getting them or waiting for the next generation, buy that, and get those headphones free.
Note: they will not work with a first gen iPod touch.
