if you have a bluetooth headset for your phone, that can be a good starter head set for skype.

are you looking for something to travel with your laptop. plantronics makes a very nice fold up usb headset.

pro:
sound quality good
mute button
volume control

con:
big bulky dsp on the usb cord. makes it sorta pain to travel with.

most bluetooth headsets should work with your Mac provided it follows the hands free profile and others i can't remember. (there was also a thread similar to this a while back...)

i have a jabra bt250v, awesome headset, works great with skype (some people say i'm too quiet on it and i sound a bit far away, but adjust the settings a bit and that goes away for the most part..)
