So I updated to 8.0.2 (no issues) on my IP6 and I don't see any difference in the health app. I don't see that any other apps have requested access to it (I have nike+ running, nike+ move, & my fitness pal). Do we now have to wait for all these apps to update to take advantage of the health kit api?

MyFitnessPal is compatible. Go to Settings in this App and enable Healthkit :)
