I am not concerned with keeping file size lower, I want the best quality possible from the camera. Is it better to choose HEIC or .JPG for photos and videos?

Thanks

Not only better quality but you will also have much more versatility in post-processing. That being said, one RAW-File takes away ~25mb.

iOS 14.3 adds ProRAW.
I was reading about it and it seems like there is less processing with Raw type files which lead me to believe it would look worse? As the iPhone is heavily dependent on processing...

Well, I got the 512gb so the increased file size makes me feel better about that decision lol...

Until now you had to choose between RAW and computational photography... with ProRAW you can have both which IMO is a really big deal.
