I know there are in ear headphones, ear buds, over ear etc.

Are the apple EarPods that come with iPhone 5 and above IN EAR headphones?

I thought in ear headphones were like urbeats, beatsX.

The EarPods that come with iPhone 5 are exact same ones that come with iPhone 6 and 6S plus. They're the ones that fit inside your ear, similar to what the AirPods are now.

The ones included with the phones to not push in or seal. The 79 ones do. There different

All of apples airbuds,ever since the iPhone 3,has been "in-ear" design..the in-ear thing just mean,that you put them in your ears,instead of,as with other headphones,attach them to your head,outside the ears.
The in-ear concept is of course much older than Apple computer company,similar headphones was designed for the Sony Walkman back in the late 1970s.
