HELP: about traveling over seas with iPhone

Any recommendations, so I dont came back with a $3000 phone bill?

I live in the US and will be taking a cruise to Jamaica, Caymans and Mexico.

Id still like to recieve text or emergancy phone calls, but other than that I dont really want to use it too much.

Any info would be most appreciated.
