My wife’s iPhone 12 Mini’s screen becomes unresponsive after few days. A hard reboot is needed to get it up and running again. I took it to Apple service Center and they said nothing wrong with the device. So I did a DFU restore of iOS 14.4 but it again got unresponsive today (after 3 days)

What to do?

Call up apple or go to a apple store tell them this is the second time it's happened and demand (nicely) a replacement phone.
 
Document what has been done and film the issue as well. Always good to have stuff on file just in case.
 
Yup, definitely contact Apple and as stated above, videos of it happening can help for the times when Apple says "we couldn't find a problem"
