Help iphone, Blackberry or ipod Touch

Hey looking for some help. Currently using a blackberry with wifi. I use my blackberry a lot for emails. Have been looking lately at getting a itouch for in the gym and on flights and stuff but want to ask a few questions about the iphone.

Can I unlock the iphone and use my existing orange sim and contract. If i unlock it do i lose any features.
Can I pick up me gmail emails from it like on the blackberry.
Can the phone be put into flight mode so it can still be used as a video/music player.

Basically can it do what my blackberry does without changing my contract, or am i best just sticking to the blackberry and buying an itouch.

You can easily get gmail mail on the iphone. There is a flight option so you keep using functions not requiring cell or internet usage. Have no idea about unlocking. That is way out of my comfort zone.

FWIW, my husband has a blackberry and hates my iphone. Thinks the Blackberry is far more functional for his needs.
