My brother accidently got his iPod touch 2nd gen into DFU (Recovery) mode

is there a way to get out of DFU mode without restoring the iPod?

Well, if it was manually put into DFU mode when it didn't need to be, you should be able to just restart it and get it behaving normally. To restart it hold down the sleep/wake button until the Slide to Power Off prompt comes up and slide a finger from left to right. Hold the sleep/wake button to power it back up and it should prompt for a passcode if one is set or return to the main home screen.

Hold the power button and home button for 20 seconds. If it get's stuck on the apple logo just connect to your computer and when iTunes will open you'll see the lockscreen.
