I'm trying to come up with a good watermark image to use with Aperture. Could anyone help me out/give me a bit of good advice as to how to do it with and without Photoshop?

You need to create an image file to use as a watermark, so if you don't use Photoshop, you'll have to employ some other software for the task. You can't generate one solely with Aperture.

Make an image that is the right size for your version output (e.g. if the image is 800 pixels in width, you might go with a watermark image of about 150 pixels).

If you want the image to have no "box" around it, then you need to save it out (of Photoshop or whatever app you're using) on a transparent layer.

Those are the basics.
