I have a 15” MBP with the touch bar. I am currently using a 27” 1080 HDMI monitor and the display is fuzzy particularly with text. I am looking to upgrade. I see on the Apple site the 27” 5k and the 21” 4K. For essentially the same money I could get two of the 4K or one 5k. Which setup would be better? Any other options I should consider other than these two offered from Apple?

Buying two 5k’s isn’t totally out of the question or budget but nearly $2800 is a lot to spend on monitors.

I run Windows in fusion for a lot of mapping/GIS software and do all my other work on the Mac side. I keep the windows on a separate desktop and switch back and forth with my Magic Mouse. Having two monitors seems like it would be really nice having on OS on each.
 
Depends what you want really, usually this kind of thing comes down to budget - however as you said you could get 2 5K's then why not? Maybe get 1 5K and see how it goes, it's going to be the best monitor to work with the MBP; albeit expensive. Personally I find dual+ monitors more important in Windows than on MacOS due to the way the systems work, so I'd get 1 5K monitor and use the MBP display. However if I didn't have to worry about a budget and had a massive desk to work with, then I'd get dual 5K's any day. Think about it, you could be the one person who uses the setup that they made a song and dance about when they announced it all!
 
1 x 5k. You get ample space for doing 2 things at once, and a nice vast expanse if you're focussing on a single task too. And yeah you can always add an extra one further down the line.

Just wondering, but...
... the Mac may be "seeing" the display "as if it were a tv", and NOT "as if it were a computer display".

You can verify this by opening the Displays pref pane, and clicking "scaled".
Do you see representations such as "1080p"?
Or do you just see representations such as "1920x1080"?

If you see 1080p, the Mac thinks the display is a tv.
You -might- be able to adjust the "overscan" slider (if there is one) to correct the fuzziness.

Some folks are much more sensitive to "jagginess" in text on a 27" 1080p display.
I'm not, because I'm older and my vision isn't what it once was.

I would NOT be concerned about whether a display offers USB-c charging.
I would prefer that my displays, "just BE displays", and nuthin' more!

I think it's better to check in system report. Even my display shows 3840x1080 in system preference, but it still consider as a TV in system report.
