Help me decide what corded keyboard and mouse to purchase

Hi, I current have a wireless Mighty Mouse as well as a Wireless apple Keyboard. Unfortunately the Wireless Keyboard won't work under Windows Vista 64 bit. I'm going to have to purchase a corded Mouse and Keyboard. I'm undecided if I should purchase an Apple wired Keyboard and Mouse or go with something other than apple. What do you guys use? This is my concern, If I purchase a keyboard and Mouse other than an Apple, would I still be able to use the keys that I currently use on an Apple Keyboard and Mouse? As an example, On an Apple Keyboard, you hold down the option key to select which operating system you want to load. Would I have that option on a non apple keyboard? Any info is greatly appreciated
