Upgrading from a 15" 2017 MBP... cannot wait to finally regularly use a better keyboard lol.
For context, I have a 16gb MBP currently and with my regular workflow, have about 33% RAM pressure utilizing around 4.3GB swap out of 5GB (admittedly not too well versed/familiar with Swap RAM metrics).

I'm debating between 16 vs 32gb on my upgrade. My use case scenario:
- 50% of the time simple browsing on Safari (20+ tabs), have around 8-10 PDFs open at any given time, lots of background apps.
- Work in medicine, occasionally using VM with Windows for access to my EMR. VM also used to look at radiology (large image sizes, scrolling through 400+ images at any given instance).
- Occasional photo editing on LR. On my current machine, the lag and rainbow wheels are painful when editing anything larger than 5MP.

Other than this, I have a few Docker packages running, generally capping out around 3-4GB regular memory usage. I'd like to game a bit (time permitting). Am hoping to get at least 5 years out of this machine (as my last has lasted me around that long!)

I'm inclined to go with the 32gb for some future proofing + perhaps some improved workflow while in LR, VMing. That being said I have not had an M1 machine in the past and am unsure if the performance gains would render the extra memory a bit useless. I am not heavy in video/photo production outside of hobby photo editing.

Go with 32GB. At least Lightroom will benefit greatly from that. There's no reason why you should cheap out and not get 32GB if you can afford it.
 
Get 32 GB. It is an additional $400, but you are already spending some money on the Mac. Plus, if you intend to keep it for 4 years like the previous one, it may make a difference in the future.
 
LR uses about twice as much RAM on M1 as on Intel.
I know, I have one of each.
However, 16GB RAM works remarkably well on M1.
Neither 16GB or 32GB is a mistake.
 
Oddly similar boat as you. I went with the base 16" 16GB option and I'm not too sure if I made the right choice. I am able to push the machine into yellow memory pressure readings with several productivity apps open (like really basic stuff) plus a similar PDF and Safari tab situation as you. I suspect that this is at least in part due to memory leaks (this thing certainly has its fair share). It's certainly bad enough that I'm contemplating returning the machine.

If you need to use VMs then an M(whatever) Mac is not for you.
Why do you say that? It depends on what you're wanting to do with it doesn't it?

I've got an M1 Pro here with Windows 11, Ubuntu and Kali Linux all running just fine under Parallels.
