I have a macbook pro 13 (mid 2012)
my alt key is stuck, pressed, but not.
When I type, symbols appear instead of letters, as if pressed.

The mac already connects directly to selecting discs, as if pressing alt.
 
Have to you tried turning the Mac off and then gently sliding your finger across the key back and forth and at different angles? That might help release the key. Its a long shot but, that is what came to mind.

the key is released perfectly.
but the mac identifies it as if it were pressed.
I already restarted.
I already formatted.
 
Did you try forceful tapping of each Option/Alt key?
Sometimes that will release the key.
Be sure to try both Alt keys.
Try gently cleaning under the keys.

If you can't get that Alt key to release properly, then you will need to replace the keyboard. That usually means replacing the top case, although you might find a replacement keyboard on eBay, or other sales sites.
