I feel like an idiot for asking this, but my wife needs help getting videos she has shot on her 3GS off of the phone. I *think* I have everything checked properly in iTunes, but nothing comes over.

Getting the video off the phone to the computer has nothing to do with iTunes. It has to do with whatever you might use on your computer to handle digital camera/video files. For a PC it is generally the Camera and Scanner Wizard. That will allow you to import the files. You can also go to My Computer or Computer, depending on the OS (XP versus Vista/Win7) and just drag them off there. On a Mac, I believe it is iPhoto, but I'm not that familiar with Macs.
