Help Snow Leopard on Machine with Parallels 3.0 cannot access

Installed Snow Leopard Upgrade on Imac with Parallels 3.0, of course now cannot open parallels on the machine. Want to
1. Determine which partition has old Windows Quicken
2. Copy that information to cd
3. Then Remove Windows, Parallels and partition

Cannot or do not know how to access info to copy any help would be appreciated. To be clear I want to copy the material in the windows partition then remove windows and parallels.
