Help! Why is my watch chiming every 5 seconds while charging ?

First thing I would try is to power the watch off and on again. If it still happens, try a different power outlet. If it still happens, take it to an Apple Store or Best Buy and ask to try a different charging cable. It sounds like something is interrupting the power connection.
